Lunch Today [weight Loss]

today lunch was pretty darn delicious. Almond crusted baked cod ๐ŸŸ with steamed broccoli ๐Ÿฅฆ, half a sweet potato ๐Ÿ  and avocado topped with everything bagel seasoning. It was a simple but nourishing meal
.
For the almond crusted cod I blended 2 tablespoons extra virgin olive oil with juice of one lemon. Drenched the cod in the lemon olive oil mixture then generously coated with almond flour seasoned with sea salt, garlic powder and black pepper. I placed on a baking sheet, drizzled with a little olive oil then baked on 400 F for about 20 minutes until the almond crust was golden brown..


Hereโ€™s how to make it:
.
2 cups shredded breast of chicken (I used store-bought rotisserie chicken).
1/2 a red apple diced.
1/4 fennel bulb thinly sliced.
1/2 celery stalk, chopped.
2 tablespoons sliced almonds.
Small handful parsley, chopped.
Small handful dill chopped.
1-2 tablespoons apple cider vinegar.
1-2 tablespoons extra virgin olive oil.
1-2 tablespoons honey.
Salt and pepper to taste.

Combine chicken, apples, fennel, celery, almonds, dill and parsley in a bowl and combine. One tablespoon at a time add the apple cider vinegar, extra virgin olive oil and honey 1 tablespoon at a time adding more of each to adjust flavor to your liking. If you want it tangier and more vinegar if you want it sweeter add more honey etc. Season with salt and pepper to taste. Makes 2 servings.


Oven baked salmon and veggies will never do you wrong especially when roasted artichoke hearts are involved! The asparagus were blanched in chicken stock and the spinach was lightly sautรฉed in a little avocado oil. This dinner was so incredibly delicious and super nourishing!
