Coconut pomegranate tart

For a dessert bursting with flavor try this delicious coconut and pomegranate tart.

 

INGREDIENTS
  • 60g butter, melted
  • 55g (1/4 cup) caster sugar
  • 200g shortbread cream biscuits
  • 300g vanilla coconut yogurt
  • 2 teaspoons gelatine powder
  • 45g (1/4 cup) pomegranate arils
  • 1 egg white

     

POMEGRANATE JELLY
  • 125ml (1/2 cup) pomegranate juice
  • 1 1/2 teaspoons gelatine powder
  • 2 tablespoons caster sugar
    Select all ingredients

Step 1

Lightly spray the bottom and facet of a 20cm (base measurement) loose-based fluted tart tin with oil. method biscuits during a kitchen appliance till finely crushed. Step 2

Pour boiling water into the larger bowl till it reaches halfway up the facet of the smaller bowl. Set aside, stirring sometimes, for five minutes or till the scleroprotein dissolves. Stir the juice and sugar along during a little bowl till the sugar dissolves. Stir within the scleroprotein mixture. put aside for twenty minutes or till commencing to set.

Step 5

Sprinkle the pomegranate arils over the coconut dairy product and slowly pour the jelly over the rear of a spoon onto the filling. Place within the electric refrigerator for two hours or till set.
